Smoked Haddock Soup

This is a delicious creamy soup made with fresh vegetables and flakes of Smoked Haddock.


Ingredients

  • 2 peeled and chopped carrots
  • 2 peeled and chopped medium potatoes
  • 1 leek
  • 1 small peeled and diced swede
  • 2 rashers of smoked back bacon
  • 1 small fillet of smoked haddock
  • 280 ml of milk
  • 3 chicken stock cubes or 3 teaspoons of bouillon
  • salt and pepper to taste.

In a deep pan put in a splash of olive oil and turn on the heat to low, chop and gently fry the bacon until cooked.

Add the vegetables and then just cover with water. Add either the stock cubes OR the bouillon powder and simmer until cooked.

In another pan place the smoked haddock and the milk and simmer gently until the fish is cooked, it will take about 10 minutes at low or until the fish flakes easily.

When the vegetables are ready bliz with your Kitchen Aid hand blender until it’s smooth and creamy.

Add the milk in which you have just cooked the smoked haddock. If the mixture is too thick keep adding water until it’s the required consistency.

Once your soup is ready then flake the haddock into small bite size pieces making sure to check that there are no bones or skin and then add the haddock to your soup mixture.

This is a very tasty soup and delicious with home made oatcakes or crusty bread or croutons.
